I found this phrase .... why not: What did you make start talking to me at the party? Is "made" considered an auxiliar in this case?

This is called a "subject question". This means that the subject of the question is also the question word - you can simply replace "What" with the answer and you have a proper sentence.
Simple subject questions don't need an extra auxiliary verb.
