I think depending on what you're trying to say, it should be more like "That's how I make my living" "I make a living doing that" "I live off that" could be used if for example you only eat bread because you have no money, and you could say 'I live off bread"

I agree with Dave’s answer. If “that” refers to a tool you use to make a living, then you could construct some situations in which someone could say “I make a living with that./I make my living with that.” One situation might be a violinist pointing towards his violin and saying “I make a living with that.”
