Is "today could have been so happy" this sentence grammatically correct? Or I should say "today could have been a very happy day"?

'Today could have been a very happy day' is correct, but it suggests it wasn't a happy day for some reason. So, it would work best as a 3rd conditional sentence so that we know HOW the day could have been better, if something else had happened. For example - today could have been such a happy day, if the weather had been nice.
