Which one choose?
These people are rich and those are poor.
or These people are rich and those ones are poor.
Should I add ones or not?
Are these sentences correct?
She likes singing herself when she is cooking.
She often sings herself when she is cleaning.

She either "likes singing" generally, or more specifically "she likes singing to herself" (when there is no one else around).
You may be thinking of "herself" as a way of emphasising "she" but it would probably not be necessary in your context.

"those ones" is not wrong but "ones" is not necessary. The noun "people" appears only a few words before and so "those" would be enough to indicate "those people".
From a stylistic point of view, many people regard "these ones" and "those ones" as rarely necessary, as "these" and "those" usually are sufficiently specific.
