Can I say these interchangeably? Have you ever gotten bored doing the same job every day? Have you never gotten bored doing the same job every day?

No. The first one is asking whether someone has ever been bored of doing the same thing every day? It's more of a genuine question. The second one is something you'd ask when you can't believe what the other person is saying or doing. For example, your friend claims he's played football for 20 years without any injuries. You are shocked and ask - "Have you NEVER been injured in your entire career?" It's like you find it impossible to believe what he's saying or what the situation is. But if you were simply asking a genuine question, you would say "Have you ever been injured in your career?" I hope this helps.
