"It's anything but!" is a set phrase which means "It's quite the opposite!" [ of whatever statement you've just made]. You don't need to repeat the word "easy" - this is understood.

I think it's technically correct (emphasis on 'think'), but it does look a bit off.
I'd probably phrase it like: 'Although planking looks easy, it definitely isn't.'
