By ginger instead of by God Is it correct to use by ginger instead of by god? Is it a secular way of saying by god? Is it formal or informal? Thanks

It is correct, and it is quite informal. It is an example of a word substitution that used to be quite common. It came about because of a cultural taboo on using "the name of God" in ways that could be considered blasphemy. Because of this concern, people would substitute another word, often beginning with the same sound.
