they are all correct, but goodbye is most generally accepted. I would not use good bye or a hyphenated version for American English.

Not really.
"Good bye" and "Good-bye" both look odd and old-fashioned. You might see them in a novel written a hundred years ago, but they are very rarely used nowadays.
Just stick with the standard modern form: Goodbye.
