Hi, love(Allah). The verb "to help" can be followed by either a full infinitive (with "to") or by a bare infinitive (without "to"). Yet, you should put "step-by-step", which is an adverb here, at the end of the sentences: It'll help you (to) speak confidently step-by-step.
