Hello ! I was writing to a professor who helped me a lot. And I said, " I appreciate you" . Is it too much?

'I appreciate you' sounds odd - a native speaker wouldn't say that. I appreciate your help is more natural.

It would be more common to say "I appreciate everything you have done/ everything you did", but "I appreciate you" is OK.
You meant to ask "did I screw up?"
"Am I screwed up" is asking about a permanent attribute, so it means "Am I crazy?"
