Bill(not a person, I mean check of your meal here) is like prose.///Menu is like poetry. Bill(not a person, it means check here) is like prose.///Menu is like poetry. Should I add any article before noun here, or plurals are more proper?

Better with plurals. I would recommend making it a metaphor - using "like" weakens it i.e. Bills are prose. Menus are poetry. It's a nice idea!
