any = every? "Give me anything" and "give me everything" both seem to translate as "Дай ми всичко". How does the listener know the difference? For example, if I go to a restaurant, how does the server know whether to bring me one random meal, or all the meals?

"Give me anything" - Дай ми каквото и да е. "give me everything" - дай ми всичко.

"Give me anything" translates better in most cases as "Дай ми каквото и да е" but this is not very polite way to ask for something random in a restaurant.

Сервитьорът донася само това, което е поръчано, конкретни ястия и продукти. "Всичко" е много неопределено и не означава нищо за сервитьора.
