I eat rice almost everyday. (I skip some days) I eat rice every other day. (I alternate) I eat rice two days apart. (means the same but sounds very awkward) I eat rice about every other day. (about half the days) Quizzes in this class are on Fridays, 3 weeks apart.

Yes Peter is right - once/twice every ___ days/weeks/months. I eat vegetables once every two days :)

I eat A once in two days in incorrect. It should be 'I eat A once every two days', e.g. On Monday, Wednesday, Friday.
