Can't, can not or cannot? I've seen the three options throughout papernews, stories, emails, etc.. but, when to use each of them? Is it a random thing? Thanks for your help

Cannot is the correct term, and can not is an alternative which is also used for emphasis (for example, I can NOT believe you ate the last biscuit!) Can't is a contraction which is applicable in any situation but it is informal and mostly used in speech. As cannot is more formal, it's used in the written word, such as an email or an article.
