I know I can say:
I will do nothing but...
I will do anything but...
But can I say: "I WON'T do anything but..."?
I've done some research regarding my question but couldn't find anything.

Yes, you can say "I won't do anything but..." The meaning is the same as "I will only do..." or "The only thing I will do is..."
