Why isn't "an" used here? "I eat [ ] apple bread." I'm taking a quiz, is it simply general?

Bread is a mass noun, so you'd either say "I eat bread" or you'd give a quantity like "I eat a piece of bread". Think of it as similar to something like sand - you can see sand, walk on sand, pick up sand, but you wouldn't typically talk about 'a sand', outside of super-specific, probably scientific, contexts (and even then it sounds odd to me).
