"I wouldn't do that, if I were you" = is the better phrasing when referring to a FUTURE event. "I wouldn't have done that, if I were in your place" = is the better phrasing when referring to a PAST event. Also note that "wouldn't" is for speculating about a situation that you probably never experienced. Your first example is just not natural for this situation because "won't" is used for an action you know that you will never do, without reference to a specific time. For example "I won't eat blue cheese"
