I'm an engineer, not a chemist, but I hopefully know enough chemistry to be able to interpret it. The 'variously bonded' part says that the methoxy and hydroxy groups are bonded onto the ring in various places, e.g. 2,6-dimethoxy, or 4-hydroxy-3-methoxy. The 'irregular array' means that the substituted phenylpropane units link to each other in irregular ways, forming a matrix, or array of these units. I hope this helps.

I understand the chemistry, consists of an irregular array of variously bonded “hydroxy-” and “methoxy-” substituted phenylpropane units.

Which part exactly don't you follow? Do you understand the Chemistry?
