which one is more common to use? And what is the difference between them? I go up to the mountain. I climb the mountain. I hike up the mountain.

The first is least common. It appears to mean “I go to the bottom of the mountain but don’t go up the mountain.” The second and third are common. The “Hike” sentence means you simply walk, without using ropes or other climbing gear. The “climb” sentence suggests you might have used ropes or other gear.
