Is this sentence correct? First, you have to get a degree in English and then do a postgraduate diploma in interpreting.

Yes, use "get" (informal) or "obtain" (formal). But Americans (if you're wondering about American English) really don't refer to it as getting a diploma. A better way to word it is: "First, you have to get a degree in English and then get a postgraduate degree in Interpreting."

I agree, it is correct, but “get” or “obtain” a diploma sounds better. Obtain is much more formal.
