Can I say "So that I can..." when someone asks "Why do you...?" For example, "Why do you avoid asking about it? - So that I can avoid being asked about it. Can I?

Yes. It is a natural flow of cause and effect. "I eat vegetables so that I can keep fit and stay healthy."
