what is the difference between: 美味かった魚 and 魚は美味いだった ? I kinda see it, but want to be sure.

The past tense of adjective will never be "~しいじゃなかった”. So the sentence 魚は美味いだった is simply incorrect. We never express it in that way. 美味かった魚 is correct. Other correct examples, ・不味かった食事 ・子供の頃は背が低かった ・少し到着が遅かった
