In English, a country's name still keeps the capital letter even if it refers to a language or nationality. You are correct in writing "Spanish" with a capital S. Don't let spelling rules from other countries confuse your English spelling. ;) So here are your phrases: "A native Spanish speaker." "A native speaker of Spanish." These are perfectly clear.
