Hello dear companions. Please, if it does not bother you, mark any mistakes and inaccuracies in my text. By this you’ll greatly help my preparation for the exam. In my English courses it’s advised to write texts on a list of topics, but it’s awfully boring. So I'd rather share a good recipe with you. Blini is perhaps one of the first dishes that come to mind when talking about Russian cuisine (just don't confuse them with pancakes). They connect, frankly, the past and the present: in the works of Russian writers they constantly occur (and whet the readers' appetite) and in the kitchens of most of my friends they are constantly fried. There are many, many recipes, in fact. The dough is made with milk, kefir, cream, buttermilk, fermented baked milk, mineral water... But I always cook custard blini with kefir. Required products: - 250 ml of kefir; - 2 eggs; - 2 tablespoons of sugar; - a pinch of salt; - ¼ teaspoon of baking soda; - 1 cup of flour (250 ml); - 3 tablespoons of vegetable oil. I always cook a whole mountain of blini, so I take 4 times more ingredients. The products must be taken out of the refrigerator in advance to keep them warm (so they mix better). Stir eggs with sugar. Add kefir and soda, stir again. Add flour gradually, add salt, stir the dough. Add vegetable oil, stir adain. Pour boiling water in a thin stream, stirring the mass. Fry blini in melted butter, greasing the pan with a culinary brush. It’s very convenient that you can add the filling and put the pancakes in the freezer. They are stored for a very long time, then you can quickly reheat some in the microwave. Bon appetit 😊

Rather than pancakes, they are actually more similar to Brazilian 'panquecas', which are also very thin, and which can be filled with meat fillings and stored in the fridge.
