Las verduras orientales tienen nombres regionales difíciles de pronunciar: ¿tun kua?, ¿tai choi?, ¿bu jao? Lo pa es un rábano blanco; shi shuan es la pimienta china y tofu, el queso de soya. También hay jengibre, hoja de crisantemo, chícharo chino, frijol soya y otros ingredientes. En una vitrina se muestran productos orientales envasados, como el vinagre de arroz, la pasta de ajonjolí, el fideo transparente, el alga para sopa, la acelga china, el lirio o el mochigome, especie de arroz dulce.

Y en un instante se puede pasar de China a España en este mercado. Aquí se pueden comprar embutidos artesanales de cuidada elaboración: morcillas, chistorras, butifarras catalana, blanca, negra, fuet, sobreasada. En los locales de abarrotes –San Juan tiene todos los giros de un mercado normal– se encuentra latería de Europa, vinagres de varios tipos, buenas pastas italianas, los mejores aceites de oliva y productos similares.

Enormes bolas de sabor son los quesos gouda holandeses, que se exhiben en algunas de las cremerías.  negocio con un siglo de tradición, herencia de la abuela. Españoles, italianos, franceses, holandeses, argentinos… la Torre de Babel desfila en busca de los mejores quesos europeos y artesanías culinarias.

“La clientela de este mercado es gente selectiva que cuida mucho su calidad de vida y hace un esfuerzo en tiempo y dinero para comer bien,” 

 “Temprano ve uno en el mercado a hombres de negocios, políticos y artistas que vienen en persona a escoger su comida. La sociedad de consumo ve al cliente sólo como un signo de pesos, cuando a los latinos nos gusta el calor humano, platicar. Aquí tratamos que el cliente se sienta un rey y con ellos establecemos relaciones de muchos años, de generaciones.”
