In this dialogue, sweep means to swing one's leg to attack someone (usually to hit their legs and cause them to fall).
Windup means the movement that a person makes before doing an action like punching, kicking, or throwing an object. Imagine the backwards lean a baseball pitcher does before throwing the baseball. That is a windup. In the dialogue the person does some kind of windup before kicking
