Using “long gone” in this case emphasizes that the modern situation is completely different, and the old way is never coming back!

Long gone means that it hasn't been around / available for "a long time", but this so-called "long time" could be any point in the past actually. It's an expression; a "figure of speech"

You’re right, this is an example of inversion. We could also say “The days of having a job for life are long gone”, meaning that those days have been over for some time, they are in the past.

"a job for life" means having a single job for your whole working life.
"Long gone" means this has not happened for a long time.
The sentence means that it no longer happens that people work for a single company their whole working lives.
