Actually it's very complicated.
שלום / מה שלומך is usually considered formal. מה קורה, מה המצב, מה נשמע are very common in colloquial speech. Formal speech is relatively rare in daily life. Even the seller in a store would say: היי, אחי, מה קורה? rather than שלום אדוני / גברתי.
So the informal expressions are more natural in use and you should use them, except you talk to VIP (the prime minister, the president etc.)
איך עבר עליך היום should be used for close friends
