Can someone tell me about German cuisine?

I would love for a native of Germany to tell me the specialities of German food. I feel that everything I find online is very Americanised. I know about beer, pretzels, and currywurst but I want to know more so your input is very appreciated. If you have links to good articles on the web or books that is also very helpful. Don't be afraid to go into detail, I am very interested. What foods should I look for when I take a trip to Germany that locals eat?

I like the potato pancakes with apple sauce, it's simply, but really delicious for me) You should try it on the Christmas market in Cologne, for example, but, I'm sure, not only there))

Mac, what about trying Kartoffelsalat and Leberkaese?

Concerning what foods you should look for, it really depends on where you go.

Schwaben: Spätzle, Maultaschen ;)

Schupfnudeln (mit Sauerkraut), Zwiebelkuchen

Pfalz, Baden: Flammkuchen

 

With sausages like Bratwurst I would have potato salad - the way they make it in Southern Germany (with vinegar and oil).

 

Apart from pretzels, bread and bread rolls (Brötchen) in general are very important.

Besides German beer, I like bratwurst, rouladen, sauerbraten, potato dumplings and German chocolate cake.  :P
