Do Arab countries celebrate International Womens' Day? What is the Arabic name for this holiday? Are there any special greetings or sayings that are used on this day?

In my country "Syria" it's the same day of a national occasion , so government celeberates both of them at the same day , but we don't celeberate those holidays by making parties on our houses for example , celeberating in these 2 holidays be as : meetings , lectures .....so on .
International Women's Day is يوم المرأة العالمي

I am not sure about the greeting. But if I were to give one that would be a generic/impersonal one along the lines of wishing women to live long تحيا المرأة التونسية

Yes, some Arab countries do celebrate the day. My homecountry, Tunisia, for instance, celebrates the International Women's Day (اليوم العالمي للمرأة). But she also celebrates the "National Women's Day" translated as عيد المرأة on August 13. On that day in 1956, the "Code of Personal Status" was promulgated as a law that delineates and guarantees women's and children's rights.
I hope this helps give you a rough idea on the topic.
