나는 나의 어머니에게 오늘 밤 전화를 걸으려고 해요. Perfectly fine but if I were you, I would paraphrase a little as follow: 오늘 밤 나는 엄마에게/어머니께 전화를 걸려고 해요.

어머니는 미니트가 거의 없어서, 우리는 드믈게 전화를 해요.

그래서 마음이 들떠요. 엄마 보고 싶어~ Maybe you should teach her how to use skype!

어머니께 전화를 걸기 or 어머니께 전화 드리기

저는 (나의) 어머니께 오늘 밤에 전화를 걸으려고/드리려고 해요.

어머니께서는 여유 시간이 거의 없으셔서, 우리는 드물게 전화/전화 통화를 해요..

그래서 마음이 들떠요. 엄마 보고 싶어~

Your Writing is so nice. But you have to remember one thing. In Korean It's very Important to use honorifics to older people. so I really recommend you to use "어머니께" than "어머니에게".
