It's like Mardi Gras without the papier-mache heads. what does this mean?
Hi, guys. There's this line from TV series Friends,
Chandler: So how's it going in Financial Services
The guy: It's like Mardi Gras without the papier-mache heads
What does he mean by that? I know Mardi Gras is a carnival celebration of some kind, a papier mache head is a mask you wear, but what is he trying to say with this?

The guy means that it is chaotic. Marti Gras is a celebration with dancing and partying and noise and chaos all around. By saying that it is Mardi Gras without the masks is just saying that it has the same conditions, it's just not called Mardi Gras (no one is wearing costumes or celebrating; it is just loud and chaotic)
