How to switch from polite & formal speech to informal in Japanese? (敬体-->普通体)
I mean how exactly should I change word constructions when it comes to the informal style - like when I'm speaking with friends, peers, someone who is younger than me or someone whom I know well.
F.e. お元気ですか?(formal) --> 元気だった?(informal)
分かりました --> 分かった
分かりません --> 分からない
これは本です --> これは本だ。
僕もそう思います --> 僕もそう思う。
ちがいます!--> ちがうよ!
私は日本人ではありません --> 僕は日本人じゃない。
どのぐらい中国語を勉強していますか?--> どのぐらい中国語を勉強してるの?
行きました --> 行った
行きませんでして --> 行かなかった
and how can I change です・ます-forms into informal style? f.e. questions with ですか?
あのロシア人はあなたの彼氏ですか?--> あのロシア人は君の彼氏だの (is that right)
I'm a new in Japanese.

These are rules:
です (formal, now) to だ (informal, now)
でした (formal, past tense) to だった (informal, past)
so the first sample you said is wrong.
お元気ですか?(it's formal, now time), the correct changing is : お元気か?(informal,; now time) the "だ" may be omitted.
Back your question..
あのロシア人はあなたの彼氏ですか? as the same changing way:
あのロシア人はあなたの彼氏か?
or あのロシア人はあなたの彼氏なのか?
When a noun at the tail of the sentence, and this sentence is a interrogative sentence, change the "だ" which at the tail of this noun to "な", and add "のか".

Among friends, あのロシア人は君の彼氏? sounds better.
Just drop ですか?and finish with the noun.
Same way for na-adjectives.
あの人は有名ですか?becomes
あの人、有名?
あのロシア人は君の彼氏か? is also correct, but it sounds more manly and sounds like you are examining the suspect rather than just questioning.
nounなのか?is equivalent to nounなんですか? in polite speech.
