What's the difference between "sail" and "sail off" ?
Underneath a silver moon, the ship is like a ghost,
She's been out there for a week, just waiting for the wind to blow,

the only difference is that 'sail off' indicates that the direction of sailing is away from the speaker. This may or may not be true with 'sail'.
