Aside from several set phrases like 'Прости меня, Господи' (never извини), there is no or very little difference. Простите is much more frequent if you ask forgiveness for something serious.
I use both of them interchangeably in everyday life, however, saying 'Простите' you should be ready for a sarcastic reply 'Бог простит'.

Если Вы выражаете сожаление по поводу причиняемого беспокойства, неудобства, то разницы нет. Также это форма вежливости при обращении, вопросе.
Очень вежливо - прошу простить меня/прошу прощения/прошу извинить меня/приношу свои извинения.
В официальных письмах используется "извинить". Пример: Извинительное письмо/записка. Приносим свои извинения за доставленное неудобство.

Actually the meaning of the both is similar. Somebody uses "прости(-те)" more frequent, somebody uses "извини(-те)" on the contrary more frequent. As for me I say 'простите' when I'm really sorry and want to be forgiven. And I say 'извини(-те)' to be polite when I enterupt somebody or want to ask a stranger something or when I bring inconviniences to someone. I think there is same difference in using with 'sorry' and 'excuse me'. Sorry ≈ Простите, Excuse me ≈ Извините.
