Should I use kyōshi instead of sensei to describe myself?
Hi I am an English teacher. I usually describe myself as えいごのせんせいです。
However, I've read that I should call myself kyōshi? I've never heard anyone use this or been told by a Japanese teacher or person to use it. My textbooks tell me I need to use the kyōshi word. Is it ok to continue using sensei?

Yes! Your textbook is right! Japanese people who work as teachers say" watashi wa kyoshi desu" in formal. You shoud also write 英語教師（Eigo kyoshi） as your occupation in something form. 
せんせい is a word referring to person (e.g. a teacher, a doctor, a politician and so on.) 
However, you can say both in casual. Anyone don't mind that.
