"Bissfest" (German, biss <- beißen: "firm when you bite into it") and "al dente" (Italian, literally "for the teeth") mean the same thing: If you cook noodles etc. in such a way that they are not totally soft, but still a little firm if you chew on them. This way of cooking noodles was introduced into Germany from Italy, therefore the Italian term is widely used. "Va bene" is Italian, it means "certainly", "all right", "very well".
