"BIG" or "LARGE" ? When and why should we use each one ? "bigger" or "larger"" ?
Both words that in Spanish can be translated as "GRANDE"
But when it is more usually used "big" and when "large" ?
Are there interchargeable ?
The same for "bigger" or "larger"

For most situations, you can use either and it will work fine.
They are mostly the same, but a little bit different in tone. "Big" and "bigger" are a little more casual.
Also, when talking about numbers, "large/larger" are usually used:
"I want to buy a big avocado."
"I want to buy a large number of avocados"
But this is not a rule.

I think they are generally interchangeable. Sometimes one will just sound better than the other but I can't think of a rule that you could memorize. You would need to give us examples and ask if they sound natural.
