It means that you would loose your job if you fail to do so ( the thing or things). more than my job is worth = would loose my job = get fired = terminated = let go = dismissed . There is no implication of any other penalty. . Such an expression would be common to use as an exaggeration. It may not be strictly true.

Failing to follow the procedures incurs some kind of penalty. In this case the penalty is worth even more than the speaker's job, so they are extra careful. Maybe a very hefty fine, or having to go to jail, without any context it's hard to conclude anything more specific.
