どちらも正しいですよ。あえていえば、調理については「技術者」とはあまり言わないので「調理師」の方が自然かもしれません。
履歴書なんかに書く場合は
ホテル・レストラン経営学科
中国料理レベルC調理師
と書いた方が少しフォーマルなので良いと思います。
