Does anyone know about sitting the CEFR certification exams in Australia, professor Google is not very helpful.

Do you have to sit the exams in order, or can you choose a level you think is appropriate?

You decide which level to take, depending on what you feel , but since it´s different for every language, I recommend you to search the topics of each exam. Here s a link to the 'Instituto Cervantes' which does these exams for spanish learners: https://examenes.cervantes.es/es/dele/examenes/a1  
About the where : I don't know which language you are interested in, but I can tell you for spanish there are over 1000 certified centers in over 100 countries and I just saw on their webpage that there are 4 certified centers in Australia in which you can be tested.

Well, YOU usually can decide which exam to take. Depending on the exam you may get a lower or higher score or a fail or pass result. You should mention which language you are interested in, as there are different exams.
