Both are correct and in conversation people would get just about the same meaning from both. One uses the verb to go and so emphasizes the going, The other uses the verb to be and so emphasizes the experience of being in Paris. I would assume that the questioner is interested in your experience of Paris unless he she follows up with questions about transportation. "Did you take the train?" "Was it convenient?" I think that there is no difference in meaning between the two sentences. It's just a difference in verb, go vs be. It would be the same if I used the simple past to say either "I was in Paris" or "I went to Paris".
