A pinch of = a little bit of
A dollop of = a little bit of
A dash of = a little bit of
Persistence = to keep trying
Work ethic = a quality/attitude a person has. The person works hard and is conscientious.
I would need more context to give a true synonym but I hope the above helps a little bit.
I've never heard of any of those phrases but they are grammatically correct.

I think you should be focusing more on your English writing skills than these 3 phrases which are almost never used.
what does mean these three phrases? incorrect
what do these three phrases mean?
I think these three as below. incorrect
I think about these three phrases as follows (or as below)
Am I get right or wrong? incorrect
Am I right or wrong? or Did I get these right or wrong?
My final note: Do you know that the words pinch, dollop, and dash are all used in cooking?
A pinch of salt = getting some salt between 2 of your fingers
A dollop of bean paste = similar to a spoonful but not actually measured
a dash of pepper = taking a pepper container which has several holes at the top and shaking it once at the food you are cooking so some of it comes out, but not a measured amount
So in your 3 examples, the writer has used these cooking words to describe someone's attitude
