What do you call them?
What do you call people who sell fish, vetegables, meat, food in local fresh markets in Asia? Is it market woman / market man? Can I say “fish seller, vetegable seller, pork seller”?
If they owns a shop in a building and sell other things, it’s shopkeeper, correct? Can I say “thing + seller” too like flower seller?

The Asian words I do not know.
The English words are.
"Market trader" = man or woman in/on a street market or any financial and commodities traders
"Fishmonger" for someone who specifically sells fish anywhere wholesale or retail or at/from the port/docks when the fish are landed
"Green Grocer" or "grocer" for vegetable sellers
"Butcher or Butchers" for meat sellers.
"Florist" for flower sellers
"Confectioner confectioners" for candy/sweet sellers
"Confectioner confectioners" specifically for chocolate sellers and makers
"Confectioner confectioners" can also include cookie and/or biscuit sellers basically anything sweet to the taste.
"Baker Bakers" for selling and making bread
"Chippy" for a fish and chip shop or the persons selling fish and chips in that shop.
"Publican" FOR the people serving in a PUBlic house a/the PUB
"Shop assistant" general term for people serving working in any shop.
"Chemist UK or Pharmacist for people serving working at or owning a Pharmacy.
In the UK on the High street you look for and go to a chemist, but pharmacy is gaining in popularity now.
But In a hospital or professional clinic etc it has always been "go to the Pharmacy to collect your prescription/medicines/medications"
these are the basic common ones for the most used shops places to buy things.
Flower seller is OK and often used in English

Well there are terms used to describe such person,
Fish seller : Fishmonger
Meat seller : Butcher
Flower seller : Florist
