My father isn't in a fit enough physical state of health to get around without the aid of a walkning stick.

You're really close. I'll make the slight amendment:
My father isn't physically fit enough to get around without the aid of a walking stick.

If I were to say this sentence, I would probably say:
My father isn’t fit enough to get around without a walking stick (or cane).
