Can I say "I oveslept something" or "I overslept doing something"?
I found examples in Cambridge Dictionary with 'oversleep' used without an object: 'I missed the bus because I overslept'
I wonder if I can say 'I overslept + object', for example 'I overslept the meeting' or 'I overslept going to the meeting'.

No, your suggestions don't work. You would say, "I overslept for the meeting".
You generally can't say "I overslept <something>". The only example I can think of using an object is "I overslept the alarm clock".

Overslept cannot take an object. It means that you slept past a deadline. It may have made you late for a meeting, but that needs to be mentioned separately.
I overslept, so I was late for a meeting.
I overslept - I did not hear the alarm clock.
Etc
