Do they all have the same meaning?

1 is correct. 2 and 3 are not. The crucial thing that is missing in 2 and 3 is the preposition IN. It might be easier to see this if you simplify the example. If we take out 'extra' clauses etc.: "All organisms the genes are composed of nucleic acid." You can hopefully see that this doesn't make sense. You can say "The tires on all cars are rubber." But you can't say "The tires all cars are rubber."
