1. There are a lot of things that I wish my high school teacher would have taught me.

In my Canadian opinion - most times we'd use your example - after wish we use the would construction.
Example
I wish I would have known.
I wish I would have traveled before attending university.
(also, because English speakers can be lazy, I might omit "that" in either sentence)

To me, both sound pretty natural in speech. Probably because Kai's structure is fine with 'could'.
A: I wish I could have gone on the trip. I was too busy.
B: I wish I would have gone on the trip. I wasn't busy - just stupid.
