What does 'No shock' mean?

Or maybe it's about the movement. Perhaps the person talking means: do it gently, do it gently, no sudden movements, no shocks. The pile of cakes does not look too stable and if they pick it up too suddenly, or put it down too suddenly it might fall over.
If you give something a shock, it can be when you you put it down or place it somewhere with a sudden movement which causes the object to hit something, E.G. a floor or a wall, and cause damage. Another example: if you back your car into another car are you might give it a shock, in other words it hits the other car, maybe causing damage.

I think they're saying don't shock me! Don't surprise me! So that they don't tip the cake over 🙂

I think shock is being used incorrectly. Unless that is electrical, but I think it looks like it is a kitchen and they should be concerned about the cakes tipping? Are those cakes?
