I think there is no difference in meaning, it would be ...
"~ (을/를) 말고(는) or ~(을/를)빼고(는)" in spoken.
"~ (을/를) 제외하고(는)" would be used in written or in formal speech.

I eat anything except  meat
저는 고기 말고는 다 먹어요(informal)
= 저는 고기(를) 빼고는 다 먹어요(informal)
= 저는 고기를 제외하고는 다 먹습니다(more formal)

I can do anything except  writing poems
= 저는 시 쓰는것 말고는 뭐든 할 수 있어요.
= 저는 시 쓰는것(를) 빼고는 뭐든 할 수 있어요.
= 저는 시 쓰는것을 제외하고는 뭐든 할 수 있어요.

When verbs come after except, you should change them into nouns because "- 빼고는, - 제외하고는, -말고는" need objects.

시 쓰다 + 제외하다 = 시 쓰는 것을 제외하다.
